Whole Wheat Waffles and Pancakes
2 Cups fresh ground whole wheat flour
3 tsp baking powder
1 tsp salt
1 egg
1 3/4 cup skim milk
1/4 cup olive oil
1 tsp vanilla extract
Mix dry ingredients thoroughly. Add egg, oil, vanilla, and milk. Mix all ingredients only until combined. For waffles, follow waffle iron directions. For pancakes, pour 1/4 cup batter on hot griddle. Cook until edges become slightly dry and bubbles form on top. Flip and brown other side.
