Meatloaf
2LBS. GROUND BEEF
1CHOPPED MEDIUM SIZE "SWEET" ONION
1 SLEEVE SALTINE CRACKERS
2 EGGS
1 BOTTLE HEINZ KETCHUP
1 OBLONG PYREX DISH
Crush saltines. Mix ground beef, onion, crushed crackers, eggs and half of the bottle of ketchup together. Press mixture in glass Pyrex dish. Pour the remaining half of ketchup on top of meatloaf and spread evenly.
Bake @ 400 degrees for about 50 minutes to 60 minutes.
Coconut Pie
COCONUT PIE
2 CUPS SUGAR
1 TABLESPOON FLOUR (Self Rising)
2 EGGS
1 STICK MARGARINE MELTED (Blue Bonnet)
1 LARGE CAN EVAPORATED MILK
1 TSP. VANILLA EXTRACT
1 CAN BAKER'S COCONUT
2 FROZEN PIE SHELLS (not deep)
Mix the sugar and flour together. Beat eggs. Pour eggs over sugar/flour mixture. Melt margarine. Add milk and vanilla to melted margarine. Pour over sugar/egg mixture. Mix well. Add can of coconut. Mix well. Pour into 2 regular pie shells. Bake 45 to 55 minutes or until firm in middle at 350 degrees.
Candied Sweet Potatoes
2 large sweet potatoes
1 tsp oil
½ cup water
2 tsp vanilla extract
2 cups sugar
Big chunk of margarine
Slice potatoes and put everything in pan and heat on high just to boiling. Turn down low, put on lid and cook 40 minutes.
