LEMON SHORTBREAD COOKIES
1/2 cup softened butter
1/4 cup brown sugar packed well
2 teaspoons of graded lemon zest
1/2 teaspoon lemon extract
1/4 vanilla extract
1 cup all purpose flour
1/4 teaspoon salt
Beat butter and brown sugar until light and fluffy. Beat in lemon zest, lemon extract, and vanilla extract. Add flour and salt. Blend well. Roll out to 1/4 inch thickness. Cut out with 2 inch round cookie cutter. Place 2 inches apart on ungreased cookie sheet. Cook until pale golden in color.
